Whats Nate Eating 9-15-11

Beef Fillet with Homemade Jalapeno Jelly

I used an un-cut section of beef filet, seasoned with montreal steak seasoning and baked in the oven till medium rare.

The potatoes are local grown, and I baked those at the same time as the steak.  Topped with low fat butter substitute, and some reduced fat shredded cheddar cheese.  Salt to taste.  I generally don't like much salt.

The Salad is fresh spinach, sliced fresh strawberries, cinnamon coated almonds, dry roasted edamame and a few garlic and cheese croutons.  Topped with a low fat oil and vinegar dressing.

It was very good!  The jalapeno jelly was a gift, and I will try to get the recipe for that and post it on here also!
