Chicken and Pear Salad

Your mouth may start watering just thinking about the delicious combo of light chicken breast and fresh pear.  This filling salad combines all the food groups and even has a healthy dollop of fiber.

You will need:
8 oz Grilled Chicken Breast (sliced)
3 Cups fresh spinach
1 pealed and sliced fresh pear
A handful of walnuts
1 Cup grated Parmesan cheese

Dressing:
1/2 cup balsamic vinegar
1/2 cup olive oil
2 Tbsp. honey

In a large salad bowl, mix freshly washed spinach, pear, and chopped walnuts.  Add the sliced chicken breasts.

Whisk the olive oil, balsamic vinegar, and honey.  Pour over top of salad bowl mixture. Top with Parmesan. (6 servings of dressing)

You can adjust the oil or vinegar amounts to your liking.  The honey really balances out the bite of the balsamic vinegar and the light bitterness.
