Ingredients
2 c. oats (quick or old fashion)
1/3 c. light brown sugar
1 tsp baking powder
1 Tbsp grated orange (about 1 orange)
1 tsp cinnamon or Chinese five spice
1/2 tsp salt
1/2 c walnut pieces, chopped
1 c sliced strawberries or blueberries are good too!
1/3 c. semi sweet chocolate chips (optional)
2 c skim milk
1 large egg
3 Tbsp melted light butter/margerine
2 tsp vanilla extract
1 ripe banana, 1/2" slices
Directions:
1. Preheat oven to 375 F and spray inside of 11 x 7" baking dish with cooking spray and place on a baking sheet.
2. In a large bowl, mix together the oats, sugar, baking powder, orange zest, cinnamon, salt, 1/2 the walnuts, half of the strawberries and half of the chocolate if using it. (save the other halves for the top). In another large bowl, whisk together the milk, egg, butter and vanilla.
3. Add the oat mixture to prepared baking dish. Arrange the remaining strawberries, walnuts and chocolate on top. Add the banana slices to the top and then pour the milk mixture over everything. Gently shimmy shake the baking dish to help the milk mixture go throughout oats.
