I have started the Insanity workout program, and along with the program is a great nutrition guide and cookbook. I will be sharing meals from here for a little while, as I will be preparing the nutrition that my body needs during this intense program.
Citrus Baked Chicken with Glazed Carrots
4 oz boneless, skinless chicken breast
1/2 Tbsp. olive oil
2 Tbsp. lemon juice
1/2 tsp. paprika
Sea salt and freshly ground pepper (to taste)
1 cup sliced carrots, cooked
2 tsp. honey
Place chicken breast in an ovenproof dish and top with olive oil, lemon juice, paprika, salt and pepper. Bake at 375 degrees for 15 to 20 minutes, or until cooked through. Serve chicken breast with cooked carrots glazed with honey.

* For a 400-calorie meal: Add 1/2 cup cooked brown rice
* For a 500-calorie meal: Increase chicken to 6 oz. and add 2/3 cup cooked brown rice.
