Chicken and Prosciutto Tortellini with Fresh Basil and Almond Pesto
I picked up a package of fresh chicken and prosciutto tortellini at the supermarket, boiled in some water, and then added 2 tablespoons of the fresh basil and almond pesto that I made the other night. (that recipe is back just a few posts).
Placed the tortellini on top of a fresh spinach salad with reduced fat feta cheese, sliced almonds and dried cranberries. Then added 2 tablespoons of ceasar dressing.
Added a side of frozen corn with a fat free butter spray, and a little salt, and enjoyed another healthy and very tasty meal!
