Healthy Pizza Casserole

In a quest to find things that are easy, quick and taste great that the whole family will love, we have taken the VERY popular Pizza Casserole recipe, and made it a meal that our family of 6 devoured, and it was even healthy!  Here are the nutrition stats per serving. (10 servings per recipe) Just as a gauge, there is more fat in one serving of regular peperoni than in an entire serving of this awesome casserole!! Oh, yeah, added it all up, and it comes out to be $1.33 per serving!  Take that to the dollar menu!


Ingredients
1 package Turkey Pepperoni
2 29oz cans of Tomato puree
12 oz Fresco Mexican Cheese
1 Bag whole wheat egg noodles
1 1/2 lbs 93/7 Ground Turkey
Salt
Pepper
1 1/2 Tablespoon Italian Seasoning
1/2 Tablespoon Carroway Seeds
Garlic Powder
Onion Powder


Instructions
Mix the raw ground turkey with the Carroway seeds and 1/2 Tablespoon Italian seasoning.  Then brown the meat in a pan.  Drain when finished and set aside in a bowl.  Place the Tomato Puree, remaining Italian Seasoning, garlic powder, onion powder, salt and pepper in a sauce pan, and simmer to mix flavors.
Boil water and cook the egg noodles, then drain and set aside.  Grate the cheese and set aside. 

In a 9x13 baking dish, layer as follows.  Thin layer sauce, ground turkey, cheese, noodles, sauce, ground turkey, cheese, noodles, sauce, pepperoni, cheese. 

Bake at 350 for about 30-40 mins, or until it bubbles.

  1. This looks yummy! About how much is a serving? 1 cup?

  2. We figured about 10 servings out of the 9x13 dish we used. and it was packed to the top! Not sure exactly what the volume of each serving was, but took the total nutritional value of everything in it, and divided by 10. Our family of six (with 4 boys) got full on it, and there were leftovers for the next day.
